At first, that was our thought, too. In this unlikely recipe—a favorite of First Lady Lou Henry Hoover’s—ripe tomatoes are peeled and cored, sprinkled with sugar, dotted with butter, and baked until soft and sweet, with a concentrated flavor. We were skeptical, too—until we took a bite.
